Keelin' For Kale..A beet and goats cheese rendition

Ingredients (makes 2 servings)

  • 4 cups baby kale (or anything but juicing kale - we found that kale will last a long time on the boat)

  • 1/3 cup goats cheese

  • White vinegar for drizzle

  • 1/3 cup almonds

  • Trader Joe’s everything bagel seasoning (or a seed mixture)

  • Salt and pepper to taste

  • 1/2 an avocado, chopped

  • 1/2 cup pickled beets, sliced

How to

  • Place chopped kale in a large bowl. You will want some room for mashin’

  • Drizzle with white vinegar onto the kale and place the chopped avocado and goats cheese in the bowl

  • Begin to mash the avocado and goats cheese into the kale. This will soften your kale and evenly distribute the goats cheese and avo into a dressing. Kale can take quite a heavy hand so don't be afraid to really mix and mash it around.

  • Dish your kale up onto 2 plates, placed the sliced beets and almonds atop and sprinkle with the everything bagel seasoning. Salt and pepper to taste.

This simple salad goes great with a chicken breast or salmon fillet and sweet potatoes. Otherwise, enjoy it by itself with a crusty piece of bread or naan.
