Keelin' For Kale..A beet and goats cheese rendition
Updated: Mar 31, 2020
Ingredients (makes 2 servings)
4 cups baby kale (or anything but juicing kale - we found that kale will last a long time on the boat)
1/3 cup goats cheese
White vinegar for drizzle
1/3 cup almonds
Trader Joe’s everything bagel seasoning (or a seed mixture)
Salt and pepper to taste
1/2 an avocado, chopped
1/2 cup pickled beets, sliced
Place chopped kale in a large bowl. You will want some room for mashin’
Drizzle with white vinegar onto the kale and place the chopped avocado and goats cheese in the bowl
Begin to mash the avocado and goats cheese into the kale. This will soften your kale and evenly distribute the goats cheese and avo into a dressing. Kale can take quite a heavy hand so don't be afraid to really mix and mash it around.
Dish your kale up onto 2 plates, placed the sliced beets and almonds atop and sprinkle with the everything bagel seasoning. Salt and pepper to taste.
This simple salad goes great with a chicken breast or salmon fillet and sweet potatoes. Otherwise, enjoy it by itself with a crusty piece of bread or naan.
